The Pasadena, California-based ghost kitchen startup Kitchen United offers restaurants fully-equipped commercial kitchen space for the preparation of delivery-only meals. The 2017-founded company with headquarters in Pasadena, California, now has 30 locations open or under construction across the country. However, it predicts that during the next five years, it can climb to 500, which would be a nearly 17-fold increase.

This enables the development of restaurants without a dine-in service and enables brick and mortar eateries to grow their meal delivery business without adding additional personnel or space. In addition to offering commercial cooking space, it also offers ordering software and back-of-house automation that supports the primary delivery services.

The strategy of Kitchen United has changed from focusing on delivery to including pickup and even dine-in operations. For instance, the majority of transactions at its two Kroger outlets are order-ahead pickups. According to Montagnon, its locations also see “a good bit” of walkup traffic, particularly at noon, before acting more like a classic ghost kitchen for dinner and late at night.

That initiative is being driven by a new investment that contains investments from some of KU’s closest corporate partners.
